saltimbocca noun[ U ] uk /ˌsæl.tɪmˈbɒk.ə/ us /ˌsɑːl.t̬ɪmˈboʊ.kə/ an Italian dish made by adding herbs to slices of veal(= meat from a young cow) and ham(= preserved meat from a pig), and cooking them in butter and wine: I ordered saltimbocca for my main course. Saltimbocca is probably my favourite Italian dish. The menu mainly consists of traditional Italian fare: pizza, pasta, and saltimbocca. I eventually moved on from roast chicken to more adventurous meals such as steak diane and saltimbocca.
