The Trappist monks own the Port-du-Salut cheese factory in north-western France. Port Salut was originally made by Trappist monks, when it was referred to as Port du Salut. Saint-Paulin cheese is based on Port-du-Salut and similar to Port-Salut. Port du Salut, Gruyere, Gouda, and goat's cheese all have at least 100 mg of cholesterol per serving.
